You will need…

  • 50ml Hayman’s London Dry Gin
  • 15ml dry vermouth
  • 20ml simple syrup (1:1 sugar syrup)
  • 15ml lemon juice
  • 5 fresh raspberries
  • 15ml egg white or 1/3rd pipette of Miraculous Foaming Bitters

Steps to make…

Muddle the raspberries in the bottom of a cocktail shaker, add all the other ingredients and shake with ice for 10-15 seconds. Strain the cocktail and remove the ice. Add the cocktail back into the shaker and dry shake (without ice) again. Double strain into a chilled coupette. Garnish with a raspberry.
