Ramos Gin Fizz

You will need…

  • 60ml Hayman’s Old Tom Gin
  • 15ml lemon juice
  • 15ml lime juice
  • 25ml simple syrup (1:1 sugar syrup)
  • 2 dashes of orange blossom water
  • 25ml pasteurised egg white
  • 25ml single cream
  • soda water

Steps to make…

Add all the ingredients to a cocktail shaker with ice (shake really hard!) for 30-45 seconds. Double strain the cocktail back into the shaker and remove the ice, then dry shake (without ice) again. Slowly pour the cocktail into a chilled highball glass (best if you pour 2/3rds of the drink, let it settle in the fridge, then pour the rest). Top up with soda to create a foamy head and then garnish with a lemon peel.
